Zesty Garlic Roasted Sweet Corn Salad
Ingredients:
4 cups sweet corn kernels
2 tablespoons olive oil
4 cloves garlic, minced
1 red bell pepper, diced
1/4 cup fresh cilantro, chopped
2 tablespoons lime juice
Salt and pepper to taste
Instructions:
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a bowl, toss the sweet corn kernels with olive oil and minced garlic until well coated.
Spread the corn mixture on the prepared baking sheet and roast in the oven for 15-20 minutes, or until the corn is slightly charred.
Transfer the roasted corn to a large mixing bowl and let it cool for a few minutes.
Add the diced red bell pepper, chopped cilantro, lime juice, salt, and pepper to the bowl with the roasted corn. Mix well to combine.
