Ingredients:

Meatloaf:

1 lb (450g) ground beef
1/2 cup breadcrumbs
1 egg
1/4 cup milk
1 small onion, finely chopped
1/2 cup ketchup (plus extra for topping)
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
Mashed Potatoes:

2 lbs (900g) potatoes, peeled and chopped
1/2 cup whole milk
1/4 cup unsalted butter
Salt and pepper to taste
Gravy:

2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup beef broth
Salt and pepper to taste

Directions:

Prepare the Meatloaf: Preheat oven to 375°F (190°C). In a large bowl, mix ground beef, breadcrumbs, egg, milk, onion, ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Shape into a loaf and place in a greased loaf pan or on a baking sheet. Spread additional ketchup on top if desired. Bake for 45-50 minutes or until the internal temperature reaches 160°F (71°C). Let rest for 5-10 minutes before slicing.

Make the Mashed Potatoes: While the meatloaf is baking, boil the potatoes in a large pot of salted water for 15-20 minutes, or until fork-tender. Drain and return to the pot. Add milk, butter, salt, and pepper, and mash until smooth and creamy.

Prepare the Gravy: In a small saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes to form a roux. Gradually add beef broth, whisking constantly to prevent lumps. Simmer for 5-7 minutes until thickened. Season with salt and pepper to taste.

Serve slices of meatloaf alongside a scoop of mashed potatoes, topped with warm gravy.
