White Cheddar and Spinach Chicken Burgers
Ingredients
For the chicken
2 large boneless skinless chicken breasts or 4 thin chicken cutlets
Salt and pepper to taste
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano or Italian seasoning
1 tablespoon olive oil
For the spinach
2 cups fresh spinach leaves
1 teaspoon olive oil
1 garlic clove minced
Salt and pepper to taste
For the cheese
4 slices white cheddar cheese
For serving
Burger buns optional
Mayonnaise mustard or sauce of choice
Lettuce tomato onion optional
Instructions
Prepare the chicken
If using large chicken breasts slice them in half horizontally to create thinner cutlets. Pound lightly if needed for even thickness.
Season both sides of the chicken with salt pepper garlic powder onion powder and oregano.
Cook the spinach
Heat 1 teaspoon olive oil in a skillet over medium heat.
Add minced garlic and sauté for about 30 seconds until fragrant.
Add fresh spinach and cook until wilted about 1 to 2 minutes. Season with salt and pepper. Remove spinach from the skillet and set aside.
Cook the chicken
In the same skillet heat 1 tablespoon olive oil over medium heat.
Add the seasoned chicken cutlets and cook for 4 to 5 minutes per side or until golden brown and cooked through with an internal temperature of 165 degrees Fahrenheit.
Assemble the burgers
When the chicken is almost done cooking place a portion of sautéed spinach on top of each cutlet.
Top with a slice of white cheddar cheese. Cover the pan with a lid and let the cheese melt for about 1 to 2 minutes.
Serve
Serve the cheesy spinach chicken patties on toasted burger buns with your favorite sauce or simply enjoy them as a low carb main dish with a side salad or roasted vegetables.
Tips
You can add a touch of red pepper flakes to the spinach for a little heat.
For an extra flavorful crust sear the chicken in a mix of olive oil and butter.
For a burger variation spread some garlic aioli on the buns and add fresh arugula or lettuce for a peppery bite.
