Ingredients:
• ½ cup dried red chilies, soaked and chopped
• 4 stalks lemongrass (white part only), minced
• ¼ cup garlic, minced
• 3 shallots, finely chopped
• 1 tablespoon fish sauce
• 1 tablespoon sugar
• ½ teaspoon salt
• ¾ cup vegetable oil
Instructions:
1. Soak dried chilies in hot water for 10 minutes, then chop finely.
2. Heat oil, then sauté garlic, shallots, and lemongrass until golden.
3. Add chopped chilies and continue to stir-fry for 3 minutes.
4. Stir in fish sauce, sugar, and salt. Cook until fragrant.
5. Let cool and store in a sterilized jar.
