Sweet Potato Honey Bun Cake with Pecan
Ingredients:
For the Cake:
• 1 cup mashed sweet potatoes (about 2 medium sweet potatoes)
• 1 cup granulated sugar
• 1 cup brown sugar, packed
• 1 cup vegetable oil
• 4 large eggs
• 2 ½ cups all-purpose flour
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• 1 teaspoon ground cinnamon
• ½ teaspoon ground nutmeg
• ½ teaspoon ground ginger
• ½ teaspoon salt
• 1 teaspoon vanilla extract
• 1 cup chopped pecans
For the Glaze:
• 1 cup powdered sugar
• 3 tablespoons honey
• 2 tablespoons unsalted butter, melted
• 2-3 tablespoons milk
• ½ teaspoon vanilla extract
Instructions:
1. Prepare the Sweet Potatoes: Preheat your oven to 350°F (175°C). Prick the sweet potatoes with a fork and bake them for about 45 minutes or until tender. Once cool, peel and mash them.
2. Make the Cake Batter: In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, and vegetable oil. Mix until well combined. Add the eggs, one at a time, mixing after each addition. Stir in the vanilla extract.
3. Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
4. Blend Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the chopped pecans.
