Succulent Grilled Lamb Chops with Fresh Chimichurri Sauce
Ingredients:
For the Lamb Chops:
8 lamb chops
2 tablespoons olive oil
1 tablespoon fresh lemon juice
3 garlic cloves, minced
Salt and pepper, to taste
For the Chimichurri Sauce:
1 cup fresh parsley, finely chopped
1/2 cup fresh cilantro, finely chopped
4 garlic cloves, minced
1/4 cup red wine vinegar
1/3 cup olive oil
1 teaspoon red pepper flakes
Salt and pepper, to taste
Directions:
1️⃣ In a small bowl, mix the olive oil, lemon juice, minced garlic, salt, and pepper. Rub this mixture over the lamb chops and let them marinate for at least 30 minutes to enhance the flavors.
2️⃣ Preheat your grill to medium-high heat. Grill the lamb chops for 3-4 minutes per side for a medium-rare result, or adjust the timing for your preferred doneness.
3️⃣ While the lamb chops cook, make the chimichurri sauce. In a bowl, combine the parsley, cilantro, garlic, red wine vinegar, olive oil, red pepper flakes, salt, and pepper. Stir until well blended.
4️⃣ When the lamb chops are done, remove them from the grill and let them rest for 5 minutes to keep them juicy.
5️⃣ Serve the lamb chops topped with chimichurri sauce, and garnish with lemon wedges for a burst of brightness.
