Stuffed Bell Pepper
Ingredients:
4 large bell peppers, tops cut off and seeds removed
1 lb ground beef or turkey
1 small onion, chopped
2 cloves garlic, minced
1 cup cooked rice
1 can (15 oz) diced tomatoes, drained
1 tsp Italian seasoning
1 cup shredded cheese (cheddar or mozzarella)
Salt and pepper to taste
Preparation:
Preheat oven to 375°F (190°C).
In a skillet, cook ground meat with onion and garlic until browned. Drain fat.
Stir in cooked rice, tomatoes, seasoning, salt, and pepper.
Fill each pepper with the mixture and place in a baking dish.
Cover with foil and bake for 30 minutes. Uncover, top with cheese, and bake 10 more minutes until melted.
Let cool slightly before serving.
