Southern Cornbread Salad with Bacon and Veggies
Ingredients:
• 8 cups crumbled cornbread
• 1lb bacon, cooked and crumbled
• 1 cup shredded cheddar cheese
• 1 medium red onion, finely chopped
• 1 bell pepper, finely chopped
• 1 large tomato, diced
• 1 can (15 oz) corn, drained
• 1 can (15 oz) pinto beans, drained and rinsed
• 1 cup mayonnaise
• 1/2 cup sour cream
• 1 tablespoon ranch seasoning mix
• Salt and pepper to taste
• Fresh parsley or green onions for garnish
Directions:
1. In a medium bowl, mix the mayonnaise, sour cream, ranch seasoning, and a pinch of salt and pepper. Set aside.
2. In a large bowl or trifle dish, layer half of the crumbled cornbread, followed by half of the crumbled bacon, cheese, onion, bell pepper, tomato, corn, and pinto beans.
3. Spread half of the mayonnaise mixture evenly over the top.
4. Repeat the layers with the remaining ingredients, ending with the mayonnaise mixture on top.
5. Garnish with fresh parsley or green onions.
6. Chill in the refrigerator for at least 2 hours before serving to allow the flavors to meld together. – found this recipe on tik tok will be making it today!!
