Ingredients:

1 cup (2 sticks) unsalted butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup graham cracker crumbs (about 14 full sheets, finely crushed)

For the S’mores Layer:

1 (10-12 oz) package milk chocolate bars, broken into squares (Hershey’s or similar)
2 cups mini marshmallows

Instructions:

1. Get Started: Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
2. Cream the Butter and Sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This usually takes about 3-5 minutes.
3. Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
5. Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
6. Add Graham Cracker Crumbs: Stir in the graham cracker crumbs until evenly distributed throughout the cookie dough.
7. Press Half the Dough: Press half of the cookie dough evenly into the prepared baking pan.
8. Bake the Base: Bake for 18-20 minutes, or until the edges are lightly golden brown and the center is set.
9. Add Chocolate and Marshmallows: Remove the pan from the oven and immediately sprinkle the chocolate squares evenly over the warm cookie base. Then, cover the chocolate with the mini marshmallows.
