Savory Garlic Butter Pork Chops with Creamy Cheesy Potato Bake

Ingredients:
4 pork chops
4 cloves garlic, minced
3 tablespoons butter
1 teaspoon fresh thyme, chopped
4 large potatoes, thinly sliced
1 cup shredded cheese (cheddar or a mix of your choice)
1/2 cup heavy cream
Salt and pepper to taste
Olive oil, for searing
Directions:
Preheat the oven to 375°F (190°C).
Heat a drizzle of olive oil in a skillet over medium-high heat. Season the pork chops with salt and pepper, then sear them in the hot skillet for 4-5 minutes per side until golden brown. Remove from the skillet and set aside.
In the same skillet, melt butter over medium heat. Add minced garlic and thyme, cooking for 1-2 minutes until fragrant.
Return the pork chops to the skillet, spoon the garlic butter over them, and transfer the skillet to the preheated oven. Roast for 12-15 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
While the pork chops cook, prepare the cheesy potato bake. Grease a baking dish and layer the thinly sliced potatoes in the dish.
Pour the heavy cream over the potatoes, then sprinkle with cheese, salt, and pepper.
Cover with foil and bake in the preheated oven for 30-35 minutes until the potatoes are tender. Remove the foil, then bake for an additional 10-15 minutes to allow the cheese to bubble and brown.
Serve the garlic butter pork chops alongside the cheesy potato bake, garnished with fresh thyme or parsley if desired.
