Roast Duck Breast
ingredients
2 fresh duck breasts.
1 tablespoon of mild olive oil.
2 sprigs of fragrant rosemary.
2 large cloves of garlic.
2 tablespoons of liquid mountain honey.
½ teaspoon of ground Espelette pepper.
A pinch of fleur de sel.
A generous pinch of crushed pepper.
1 tablespoon of strong Dijon mustard.
Steps to follow
In a bowl, combine the honey, mustard, olive oil, a clove of chopped garlic, a few sprigs of rosemary, chili pepper, fleur de sel and pepper.
Brush the breasts with the mixture, taking care to coat them well. Leave to cool for at least 30 minutes.
Heat your oven to 200ºC. Place the breasts flesh against flesh and insert the second clove of garlic, cut in half, between the pieces. Tie everything securely to have a well-formed roast.
In a casserole dish suitable for the oven, brown the roast for 5 minutes per side to sear it well. Close the casserole dish and place it in the oven for 15 to 20 minutes, depending on whether you prefer pink or more advanced cooking.
