Portuguese Grilled Chicken
Spicy Grilled Portuguese Chicken with Garlic & Lemon Marinade
Ingredients:
4 bone-in, skin-on chicken thighs (or use a whole chicken cut into pieces)
3 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon smoked paprika
1 tablespoon sweet paprika
1 teaspoon cayenne pepper (adjust to taste)
1 teaspoon dried oregano
1 teaspoon ground cumin
Juice of 1 lemon
Zest of 1 lemon
1 tablespoon red wine vinegar
Salt and pepper to taste
Optional garnish: chopped parsley, lemon wedges
Directions:
In a bowl, whisk together olive oil, garlic, smoked paprika, sweet paprika, cayenne, oregano, cumin, lemon juice, lemon zest, red wine vinegar, salt, and pepper to create the marinade.
Place chicken in a large resealable bag or dish. Pour marinade over the chicken, ensuring all pieces are well coated. Marinate for at least 2 hours or overnight in the refrigerator.
Preheat grill to medium-high heat. Oil the grates lightly to prevent sticking.
Remove chicken from marinade and grill, skin-side down first, for about 6–8 minutes per side or until internal temperature reaches 165°F (74°C) and skin is crispy.
Let rest for 5 minutes before serving. Garnish with chopped parsley and lemon wedges if desired.
