Ingredients:
8–10 lasagna noodles
1 ½ cups ricotta cheese
1 cup shredded mozzarella cheese (plus extra for topping)
½ cup grated Parmesan cheese
1 large egg
1 tsp Italian seasoning
1 ½ cups pizza sauce (store-bought or homemade)
1 cup sliced pepperoni
1 tbsp olive oil (for noodles)
Fresh basil or parsley for garnish (optional)

Instructions:
1. Cook the noodles:
Bring a large pot of salted water to a boil. Add lasagna noodles and cook until just al dente (don’t overcook — they’ll tear when rolling). Drain and drizzle lightly with olive oil to prevent sticking.
2. Make the cheese filling:
In a medium bowl, mix ricotta, ½ cup mozzarella, Parmesan, egg, and Italian seasoning until creamy.
3. Assemble the rollups:
Lay the noodles flat on a baking sheet or parchment paper. Spread about 2 tablespoons of the ricotta mixture over each noodle.
Arrange a few slices of pepperoni on top of the cheese layer.
4. Roll them up:
Carefully roll each noodle from one end to the other. Place seam-side down in a greased baking dish.
5. Add the sauce and cheese:
Pour pizza sauce over the rollups and sprinkle with the remaining mozzarella. Top with a few extra pepperoni slices if desired.
6. Bake:
Cover with foil and bake at 375°F (190°C) for 20 minutes. Remove foil and bake for another 10 minutes, until cheese is bubbly and slightly golden.
7. Serve:
