Nando’s Style PERi PERi Sauce

Ingredients:

6 red chilies

1 red bell pepper

1/4 cup olive oil

4 cloves garlic

1 teaspoon paprika

1 teaspoon oregano

1 teaspoon salt

1/4 cup apple cider vinegar

Juice of 1 lemon

1 teaspoon brown sugar

Instructions:

1. Preheat your oven to 400°F (200°C). Roast the red chilies and red bell pepper until the skins are charred.

2. Peel off the skins from the roasted chilies and bell pepper, then remove the seeds.

3. Add the roasted chilies, bell pepper, garlic, paprika, oregano, salt, apple cider vinegar, lemon juice, and brown sugar to a blender and blend until smooth.

4. Heat the olive oil in a saucepan over medium heat, then pour in the blended mixture.

5. Simmer for 10–15 minutes, stirring occasionally, until the sauce thickens.

6. Allow the sauce to cool completely before transferring it to a jar.

7. Use your homemade PERi PERi sauce as a marinade or drizzle it over grilled chicken or vegetables.
