Italian Turkey Zucchini Skille

Ingredients:

– 1 pound ground turkey

– 2 medium zucchinis, diced

– 1 bell pepper, chopped

– 1 onion, chopped

– 3 cloves garlic, minced

– 1 can (14.5 oz) diced tomatoes, undrained

– 1 tablespoon olive oil

– 1 teaspoon Italian seasoning

– Salt and pepper, to taste

– 1/4 cup grated Parmesan cheese

– Fresh basil, for garnish

Instructions:

1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent, about 2-3 minutes.

2. Add the ground turkey, breaking it up with a spatula, and cook for 5-7 minutes or until browned completely.

3. Incorporate the diced zucchinis and chopped bell pepper, cooking until the vegetables are tender, about 5 minutes.

4. Mix in the diced tomatoes with their juice, and season with Italian seasoning, salt, and pepper. Stir well and let it simmer for 10 minutes to allow the flavors to meld.

5. Remove from heat and sprinkle with grated Parmesan cheese. Garnish with fresh basil before serving.
