Honey Vanilla Banana Bread
Ingredients:
3 large overripe bananas (about 1.5 cups mashed)
1 cup all-purpose flour
1/2 cup honey
1/4 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1/4 teaspoon salt
Instructions:
Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
In a large mixing bowl, mash the bananas until smooth.
Add the melted butter, honey, eggs, and vanilla extract to the mashed bananas. Stir until fully combined.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually fold the dry ingredients into the wet mixture. Mix gently until just combined—do not overmix.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes:
Add 1/2 cup chopped walnuts or chocolate chips for extra texture and flavor.
Store at room temperature in an airtight container for up to 4 days or freeze individual slices for longer storage.
For a twist, try using maple syrup instead of honey, or substitute almond extract for a different flavor profile.
