Honey Garlic Chickpea Stuffed Zucchini
Ingredients:
2 large zucchinis
1 can chickpeas, drained and rinsed
2 cloves garlic, minced
2 tablespoons honey
1 tablespoon soy sauce
1 tablespoon olive oil
Salt and pepper to taste
Instructions:
Preheat the oven to 375°F (190°C).
Cut the zucchinis in half lengthwise and scoop out the seeds to create a hollow center.
In a bowl, mix the chickpeas, garlic, honey, soy sauce, olive oil, salt, and pepper.
Stuff the hollowed-out zucchinis with the chickpea mixture.
Place the stuffed zucchinis on a baking sheet and bake for 25-30 minutes, or until the zucchinis are tender.
Serve hot and enjoy!
