Grilled Chicken with Colby Jack, Bacon, Mushrooms & Honey Mustard Sauc

Ingredients:

 

4 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

1 cup Colby Jack cheese, shredded

6 slices crispy bacon, crumbled

1 cup sautéed mushrooms

1/4 cup honey mustard sauce

Fresh parsley, chopped (for garnish)

1 cup steamed vegetables (such as broccoli or carrots)

Directions:

 

Preheat grill or grill pan to medium-high heat.

Rub the chicken breasts with olive oil, garlic powder, paprika, salt, and pepper. Grill the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C).

While the chicken is grilling, sauté the mushrooms in a pan over medium heat until tender, about 5-7 minutes.

Once the chicken is cooked, top each breast with a generous portion of sautéed mushrooms, crumbled bacon, and shredded Colby Jack cheese. Cover the chicken with a lid for 2-3 minutes to melt the cheese.

Drizzle with honey mustard sauce and garnish with fresh parsley. Serve with a side of steamed vegetables for a balanced meal.
