Ingredients:

1 cup cornmeal

1/2 cup all-purpose flour

1 tablespoon sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup buttermilk

1 egg

2 tablespoons melted butter

1/2 cup shredded smoked Gouda cheese (plus more for topping)

Honey, for drizzling

Cooking spray or oil for waffle iron

Directions:

Preheat mini waffle maker and lightly grease with cooking spray or oil.

In a mixing bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.

In a separate bowl, combine buttermilk, egg, and melted butter. Stir wet mixture into dry ingredients just until combined. Fold in shredded smoked Gouda.

Spoon small portions of the batter into the mini waffle maker (about 1–2 tablespoons each). Cook until golden and crispy, about 2–3 minutes.

Place finished waffle bites on a serving plate. While warm, sprinkle with extra shredded smoked Gouda and drizzle generously with honey.
