Golden Brown Peach Cobbler with Gooey Filling

Ingredients:

4 ripe peaches, peeled and sliced
1 tablespoon lemon juice
3/4 cup granulated sugar
1/4 cup brown sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 tablespoon cornstarch
1 cup all-purpose flour
1/2 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup milk
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract

Directions:

Preheat the oven to 375°F (190°C). Grease a 9-inch baking dish.
In a large bowl, combine the sliced peaches, lemon juice, granulated sugar, brown sugar, cinnamon, nutmeg, and cornstarch. Toss to coat the peaches evenly. Pour the mixture into the prepared baking dish.
In a separate bowl, whisk together the flour, sugar, baking powder, and salt. Add the milk, melted butter, and vanilla extract to the dry ingredients and stir until smooth.
Spoon the batter over the peach mixture, spreading it evenly but leaving some gaps for the filling to peek through.
Bake for 35-40 minutes, or until the top is golden brown and the filling is bubbling.
Let the cobbler cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream or whipped cream!
