Ingredients:

1 pound baby potatoes, halved

1/4 teaspoon black pepper
1 tablespoon chopped fresh parsley

Instructions:

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a bowl, toss the halved baby potatoes with olive oil, minced garlic, lemon juice, lemon zest, salt, and black pepper until well coated.
Spread the potatoes in a single layer on the prepared baking sheet.
