Garlic Herb Roasted Veggies
A hearty and flavorful side dish for every meal!

Ingredients:

1 lb baby potatoes, halved
1/2 lb baby carrots
1/2 lb green beans, trimmed
3 tbsp olive oil
3 cloves garlic, minced
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper, to taste
2 tbsp fresh parsley, chopped (for garnish)
Step by Step:
Preheat the Oven:
Set your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
Prepare the Veggies:
Wash and dry the potatoes, carrots, and green beans. Halve the potatoes and trim the green beans.
Season the Veggies:
In a large bowl, combine olive oil, minced garlic, thyme, rosemary, salt, and pepper. Toss the potatoes and carrots in the mixture first.
Roast in the Oven:
Spread the potatoes and carrots evenly on the baking sheet. Roast for 20 minutes, then add the green beans and stir everything together. Roast for another 15-20 minutes until golden and crispy.
Garnish and Serve:
Remove from the oven, sprinkle with fresh parsley, and serve warm.
