Garlic Butter Pork Chops with Cheddar Grit
Ingredients:
– 4 bone-in pork chops (about 1 inch thick)
– 4 tablespoons unsalted butter
– 4 cloves garlic, minced
– 1 teaspoon fresh thyme leaves
– 1 teaspoon fresh rosemary, chopped
– Salt and pepper to taste
– 1 cup stone-ground grits
– 4 cups water or chicken broth
– 1 cup shredded sharp cheddar cheese
– 2 tablespoons heavy cream
– Chopped parsley for garnish
Directions:
1. Start by preparing the cheddar grits. In a medium saucepan, bring the water or chicken broth to a boil. Gradually whisk in the grits, then reduce the heat to low. Cook, stirring frequently, until the grits are thick and creamy, about 20-25 minutes. Stir in the cheddar cheese and heavy cream, and season with salt and pepper to taste. Keep warm.
2. While the grits are cooking, season the pork chops with salt and pepper on both sides. In a large skillet over medium-high heat, melt 2 tablespoons of butter. Once the butter is sizzling, add the pork chops and sear for about 4-5 minutes on each side, or until fully cooked and golden brown. Remove the chops from the skillet and set aside.
3. In the same skillet, lower the heat and add the remaining 2 tablespoons of butter. Add the minced garlic, thyme, and rosemary, sautéing until fragrant, about 1 minute. Return the pork chops to the skillet to coat in the garlic butter sauce, cooking for an additional minute.
4. To serve, place a generous scoop of cheddar grits on each plate, top with a pork chop, and drizzle with the garlic butter sauce from the skillet. Garnish with chopped parsley for a fresh finish.
