Ingredients

For the Meatloaf:

1 lb ground beef

1 lb ground pork

1 cup breadcrumbs

2 eggs

1/4 cup milk

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

For the French Onion Topping:

2 large onions, thinly sliced

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon sugar

1/4 cup beef broth

6 slices Swiss cheese

Garnish:

Fresh thyme sprigs

Instructions

1. Prepare the Meatloaf Mixture

Preheat your oven to 375°F (190°C).

In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, eggs, milk, Worcestershire sauce, garlic powder, onion powder, dried thyme, salt, and pepper.

Mix until just combined. Do not overmix.

2. Shape and Bake

Shape the mixture into a loaf and place it in a greased loaf pan or on a baking sheet lined with parchment paper.

Bake for 45–50 minutes or until the internal temperature reaches 160°F (71°C).

3. Caramelize the Onions

While the meatloaf bakes, heat butter and olive oil in a large skillet over medium heat.

Add sliced onions and sprinkle with sugar. Cook, stirring occasionally, for 20–25 minutes until the onions are golden and caramelized.

Add beef broth to deglaze the pan, stirring to incorporate any browned bits.

4. Add the Toppings

Remove the meatloaf from the oven. Spread the caramelized onions evenly over the top.

Layer Swiss cheese slices over the onions.

5. Melt the Cheese

Return the meatloaf to the oven for 5–7 minutes, or until the cheese is melted and bubbly.

6. Garnish and Serve

Let the meatloaf rest for 5 minutes before slicing. Garnish with fresh thyme sprigs and serve warm.

Tips

Serve with mashed potatoes or roasted vegetables for a complete meal.

Use Gruyère cheese as an alternative to Swiss for a richer flavor.
