Dump-and-Bake Chicken Tzatziki with Ric

Tender marinated chicken, zucchini, and rice baked together, topped with fresh homemade tzatziki.

Ingredients:

• 1 lb chicken breast, diced

• 1 cup white rice

• 2 cups chicken broth

• 1 grated zucchini

• 2 tbsp olive oil

• 2 tbsp lemon juice

• 1 tbsp parsley

• 1 tsp each oregano, thyme, smoked paprika

• ½ tsp each cumin, garlic powder, onion powder, seasoned salt

• ¼ tsp black pepper, turmeric

• ⅛ tsp cayenne

Tzatziki:

• 1 cup Greek yogurt

• ½ cup grated cucumber (drained)

• 1 tbsp lemon juice

• 1 clove garlic, minced

• 1 tbsp dill

• ½ tsp salt

• 1 tbsp olive oil

Instructions:

1. Marinate chicken with spices, olive oil, lemon juice.

2. Preheat oven to 375°F.

3. Layer rice, zucchini, broth in greased dish; top with chicken.

4. Cover and bake 40 mins until chicken and rice cooked.

5. Mix tzatziki ingredients; chill.

6. Serve casserole topped with tzatziki.
