Crispy Rhubarb Waffle Stick

Ingredients:

1 cup all-purpose flour

1 tbsp cornstarch

1 tbsp sugar

1 tsp baking powder

½ tsp salt

¾ cup milk

1 egg

2 tbsp unsalted butter, melted

1 tsp vanilla extract

½ cup finely chopped fresh rhubarb

1 tbsp brown sugar

For Rhubarb Dip:

1 cup rhubarb, chopped

2 tbsp honey

¼ cup water

½ tsp lemon zest

Pinch of salt

Directions:

Preheat a waffle maker and grease lightly with nonstick spray.

In a mixing bowl, whisk together flour, cornstarch, sugar, baking powder, and salt.

In a separate bowl, whisk milk, egg, melted butter, and vanilla until combined.

Pour wet ingredients into the dry and mix until just combined.

Fold in chopped rhubarb and brown sugar gently.

Pour batter into the waffle maker and cook until crisp and golden, about 3–5 minutes.

Let waffles cool slightly, then slice into sticks for easy dunking.

For the Rhubarb Dip:
8. In a small saucepan, combine rhubarb, honey, water, lemon zest, and salt.
9. Simmer on medium heat for 10–12 minutes until rhubarb breaks down and sauce thickens.
10. Let cool before serving as a dip with waffle sticks.
