Crispy Ranch Chicken with Buttery Herb Noodles

Ingredients:

For the Chicken:

4 boneless, skinless chicken breasts

1 packet (1 oz) ranch seasoning mix

1 cup crushed cornflakes or seasoned breadcrumbs

1/2 cup grated Parmesan cheese

2 eggs, beaten

Salt and black pepper to taste

2 tablespoons vegetable oil (for frying)

For the Noodles:

8 ounces egg noodles

3 tablespoons butter

1/2 teaspoon garlic powder

1/2 teaspoon dried parsley

1/2 teaspoon dried basil

Salt and black pepper to taste

2 tablespoons grated Parmesan (optional)

Directions:

Prepare the chicken:
Pound chicken breasts to even thickness. Season lightly with salt and pepper. In a shallow dish, combine crushed cornflakes (or breadcrumbs), ranch seasoning, and Parmesan. Dip each chicken breast into the beaten eggs, then press into the crumb mixture to coat.

Cook the chicken:
Heat oil in a large skillet over medium heat. Cook chicken 4–5 minutes per side or until golden brown and cooked through. Remove and let rest.

Make the noodles:
Cook egg noodles according to package directions. Drain, then return to pot. Add butter, garlic powder, parsley, basil, salt, and pepper. Stir until butter is melted and noodles are evenly coated. Add Parmesan if desired.

Serve:
Plate the buttery herb noodles with crispy ranch chicken on top or alongside. Garnish with a sprinkle of parsley or Parmesan.
