Crispy Homemade Almond Crackers with Fresh Herbs: GF Perfection!
Ingredients:
1 1/2 cups (168g) almond flour
2 tablespoons (8g) finely chopped fresh herbs (e.g., rosemary, thyme, parsley, chives or 2 teaspoons dried mixed herbs)
1/2 teaspoon (3g) sea salt
1/4 teaspoon (0.5g) garlic powder
1/4 teaspoon (0.5g) black pepper
1 flax egg (1 tablespoon ground flaxseed + 2.5 tablespoons water, let sit 5 minutes) OR 1 egg white
2 tablespoons (30ml) olive oil
Directions:
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a mixing bowl, combine almond flour, chopped fresh herbs (or dried herbs), sea salt, garlic powder, and black pepper.
3. In a small bowl, prepare the flax egg (or lightly whisk egg white). Add olive oil to the flax egg/egg white and mix.
4. Add the wet ingredients to the dry ingredients and mix until a dough forms.
5. Place dough between two sheets of parchment paper and roll out thinly, about 1/16 to 1/8 inch (1.5-3mm) thick.
6. Remove top parchment. Score dough into desired cracker shapes.
7. Transfer the bottom parchment with dough onto the baking sheet.
8. Bake for 10-15 minutes, until edges are golden and crackers are firm. Watch carefully.
9. Let cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely. Crackers will crisp further upon cooling.
