Ingredients:

1 pound (450g) jalapeno peppers
1 cup (120g) all-purpose flour
1 teaspoon (5g) salt
1/2 teaspoon (2.5g) black pepper
1/2 teaspoon (2.5g) garlic powder
1/4 teaspoon (1.25g) cayenne pepper (optional)
1 cup (240ml) buttermilk
Vegetable oil, for frying

Directions:

1. Wash and dry the jalapeno peppers. Slice them in half lengthwise, remove the seeds and membranes (optional, for less heat).
2. In a medium bowl, whisk together the flour, salt, pepper, garlic powder, and cayenne pepper (if using).
3. In a separate shallow dish, pour the buttermilk.
4. Dip each jalapeno half into the buttermilk, ensuring it’s fully coated.
5. Dredge the buttermilk-coated jalapenos in the flour mixture, pressing gently to ensure the flour adheres.
6. Heat about 1 inch (2.5cm) of vegetable oil in a large skillet or deep fryer to 350°F (175°C).
7. Carefully place the jalapeno halves in the hot oil, working in batches to avoid overcrowding the pan.
8. Fry for 3-4 minutes per side, or until golden brown and crispy.
9. Remove the fried jalapenos from the oil and place them on a wire rack or paper towel-lined plate to drain excess oil.
10. Serve immediately.

Tips:
