Crispy Fish & Cheesy Loaded Wedges Delight
Ingredients:
Fresh fish fillets (cod, tilapia, or your choice)
Olive oil
Salt and pepper
Garlic powder
Paprika
Potatoes, cut into wedges
Cheddar cheese, shredded
Sour cream
Chives, chopped
Fresh lemon juice
Flour for dredging
Instructions:
1. Preheat your oven to 425°F (220°C) for the wedges.
2. Wash and cut the potatoes into wedges. Toss them in olive oil, salt, pepper, and paprika. Spread them out on a baking sheet and bake for 30-35 minutes, flipping halfway through until golden and crispy.
3. While the wedges are baking, prepare the fish. Rinse the fish fillets and pat them dry with a paper towel.
4. Season both sides of the fish with salt, pepper, garlic powder, and a squeeze of fresh lemon juice.
5. Dredge each fillet in flour, shaking off any excess.
6. Heat olive oil in a skillet over medium heat. Once hot, add the fish fillets and cook for 3-4 minutes on each side until they are crispy and cooked through.
7. While the fish cooks, remove the wedges from the oven when done. Sprinkle the shredded cheddar cheese on top of the hot wedges and return them to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
8. To serve, place the cheesy wedges on a plate, top with a dollop of sour cream, and sprinkle with chopped chives.
