Crispy Chicken Fried Steak

Ingredients:

For the Steak:
4 (6 oz) cube steaks (about 2 lbs total)
1 cup all-purpose flour
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper (optional, for heat)
2 large eggs
1/2 cup buttermilk (or regular milk)
1 tablespoon hot sauce (optional)
1/2 cup vegetable oil (or enough for frying)

For the Gravy:
2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups whole milk
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper

Directions:

1️⃣ Prepare the Steak: In a shallow dish, combine flour, garlic powder, onion powder, smoked paprika, salt, pepper, and cayenne pepper (if using). In another bowl, whisk together eggs and buttermilk.

2️⃣ Coat the Steaks: Dredge each steak in the seasoned flour, then dip in the egg mixture, and return to the flour for a second coating, pressing the flour firmly onto the steak.

3️⃣ Fry the Steaks: Heat vegetable oil in a large skillet over medium-high heat until hot (about 350°F). Carefully add the breaded steaks to the hot oil, frying for 3-4 minutes per side until golden brown and crispy. Remove and place on a wire rack or paper towel-lined plate to drain excess oil.

4️⃣ Make the Country Gravy: In the same skillet, melt butter over medium heat. Stir in 2 tablespoons of flour and cook for 1-2 minutes until golden brown.

5️⃣ Gradually whisk in the milk, ensuring no lumps form. Add garlic powder, onion powder, salt, and pepper. Simmer for 3-5 minutes, stirring constantly, until the gravy thickens. Taste and adjust seasoning as needed.

6️⃣ Serve: Serve the chicken fried steak topped with the creamy gravy. Garnish with extra black pepper if desired. Serve with mashed potatoes, green beans, or corn.
