Crispy Cheesy Mashed Potato Puffs with a Golden Crust

Ingredients:
4 medium-sized potatoes, peeled and cut into cubes
2 tbsp butter
1/4 cup milk
1/2 cup grated sharp cheddar cheese
1/4 cup grated Parmesan cheese
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp ground black pepper
1/2 tsp salt
1/4 cup breadcrumbs
1 tbsp fresh parsley, chopped (for garnish)
Directions:
Preheat your oven to 400°F (200°C) and grease a muffin tin with butter or cooking spray.
Boil the potatoes in a large pot of salted water until fork-tender, about 12-15 minutes. Drain and return to the pot.
Mash the potatoes with butter and milk until smooth. Stir in the cheddar cheese, Parmesan cheese, garlic powder, onion powder, salt, and black pepper.
Spoon the mashed potatoes into the muffin tin, pressing them down to form a compact layer. Sprinkle the breadcrumbs on top of each potato puff.
Bake for 20-25 minutes or until the tops are golden brown and crispy.
Remove from the oven, let cool for a few minutes, and garnish with fresh parsley. Serve warm.
