Crispy Cheddar Baked Chicken

Ingredients:

4 boneless, skinless chicken breasts
1 cup shredded cheddar cheese
1/2 cup breadcrumbs (preferably panko)
1/4 cup grated Parmesan cheese
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon dried thyme
1/2 teaspoon paprika
Salt and pepper, to taste
2 large eggs
2 tablespoons olive oil
Fresh parsley, chopped (optional for garnish)

Directions:

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
In a shallow bowl, combine the shredded cheddar cheese, breadcrumbs, Parmesan cheese, garlic powder, onion powder, thyme, paprika, salt, and pepper. Mix until well combined.
In another bowl, beat the eggs until smooth.
Dip each chicken breast into the beaten eggs, ensuring it is fully coated. Then, coat the chicken in the cheese and breadcrumb mixture, pressing down gently to adhere the coating.
Place the coated chicken breasts on the prepared baking sheet. Drizzle with olive oil to help the coating crisp up while baking.
Bake for 25-30 minutes, or until the chicken is fully cooked and the coating is golden and crispy.
Remove from the oven and let the chicken rest for a few minutes before serving.
Garnish with freshly chopped parsley if desired.
