Creamy Shrimp Pasta
Ingredients:
12 oz wide, flat pasta (fettuccine or pappardelle)
1 lb shrimp, peeled and deveined
2 tablespoons butter
2 tablespoons olive oil
4 cloves garlic, minced
1 cup heavy cream
½ cup Parmesan cheese, grated
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon red pepper flakes (optional)
1 teaspoon Italian seasoning
½ cup pasta water (reserved)
1 tablespoon lemon juice
2 tablespoons fresh parsley, chopped (for garnish)
Instructions:
Cook the Pasta:
Boil water in a large pot with a pinch of salt. Cook pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
Prepare the Shrimp:
Heat olive oil and butter in a large skillet over medium heat.
Add shrimp, season with salt, black pepper, and red pepper flakes. Cook for 2-3 minutes per side until pink and opaque. Remove shrimp and set aside.
Make the Creamy Sauce:
In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
Pour in heavy cream and stir in Parmesan cheese, Italian seasoning, and lemon juice. Simmer for 2-3 minutes, stirring occasionally.
Add reserved pasta water to thin out the sauce if needed.
Combine Everything:
Return shrimp to the skillet and toss with the sauce.
Add the cooked pasta and mix well, ensuring the noodles are fully coated.
Serve & Garnish:
Plate the pasta in a white bowl. Sprinkle with fresh parsley for a pop of color.
Serve immediately and enjoy while warm!
