Ingredients:

1 cup pitted Medjool dates

1/2 cup unsweetened shredded coconut (plus extra for topping)

1/2 cup raw almonds or cashews

1 tablespoon coconut oil

1/2 teaspoon vanilla extract

Pinch of sea salt

Instructions:

In a food processor, blend the almonds or cashews until finely chopped.

Add dates, shredded coconut, coconut oil, vanilla extract, and salt.

Blend until the mixture sticks together when pressed.

Press the mixture firmly into a parchment-lined 8×8-inch pan.

Sprinkle extra shredded coconut on top and press gently.

Chill in the refrigerator for at least 1 hour.

Slice into squares and store in an airtight container.
