Cinnamon Sweet Potato Cookies Recipe

Ingredients:

1 cup mashed sweet potato (about 1 medium sweet potato)
1/2 cup unsalted butter, softened
3/4 cup brown sugar
1 large egg
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
Optional: 1/2 cup chopped pecans or walnuts

Instructions:

Prepare the Sweet Potato:
Peel, cube, and boil the sweet potato until fork-tender (about 10 minutes). Mash it until smooth and let it cool to room temperature.

Make the Cookie Dough:
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, cream together the softened butter and brown sugar until light and fluffy.

Beat in the egg, vanilla extract, and mashed sweet potato until well combined.

In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms. Fold in pecans or walnuts, if using.

Shape and Bake:
Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten slightly with the back of a spoon.

Bake in the preheated oven for 12–15 minutes, or until the edges are lightly golden and the centers are set.

Cool and Serve:
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
