Christmas Carrot Cake

Ingredients

For the Cake

2 cups grated carrots

1½ cups all-purpose flour

1 cup sugar (white or brown)

1 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

½ tsp nutmeg

½ tsp ginger (optional)

½ cup vegetable oil

3 large eggs

1 tsp vanilla extract

½ cup chopped walnuts or pecans (optional)

½ cup raisins (optional)

Pinch of salt

For the Cream Cheese Frosting

200 g cream cheese (softened)

½ cup butter (softened)

1½ cups powdered sugar

1 tsp vanilla extract

Instructions

1. Make the Cake

1. Preheat the oven to 180°C (350°F). Grease and line a cake pan.

2. In a bowl, whisk together flour, baking powder, baking soda, spices, and salt.

3. In another bowl, beat eggs, sugar, oil, and vanilla until smooth.

4. Add the dry ingredients into the wet ingredients and mix gently.

5. Fold in the grated carrots, nuts, and raisins if using.

6. Pour the batter into the pan and bake for 30–40 minutes, or until a toothpick comes out clean.

7. Let the cake cool completely before frosting.

2. Make the Frosting

1. Beat cream cheese and butter until creamy.

2. Add powdered sugar gradually, then add vanilla.

3. Spread generously over the cooled cake.

Decoration Ideas for Christmas

Sprinkle cinnamon or powdered sugar “snow.”

Add crushed walnuts or pecans on top.

Decorate with small carrot designs using colored frosting.

Add holiday sprinkles or a small Christmas topper.
