Chicken, Spinach, and Mushroom Bake
Ingredients:
– 4 boneless, skinless chicken breasts
– 2 cups chopped fresh spinach
– 1 cup sliced mushrooms
– 1 cup cream of mushroom soup
– 1/2 cup sour cream
– 1 cup shredded mozzarella cheese
– 2 cloves minced garlic
– 1 tablespoon olive oil
– 1 teaspoon Italian seasoning
– Salt and pepper to taste
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1-2 minutes until aromatic.
3. Add mushrooms, cooking for 5-7 minutes until tender and moisture has evaporated.
4. Stir in chopped spinach, cooking for 2-3 minutes until wilted. Set aside.
5. In a bowl, combine cream of mushroom soup, sour cream, Italian seasoning, salt, and pepper.
6. Arrange chicken breasts in a greased baking dish in a single layer. Evenly distribute the spinach and mushroom mixture over the chicken.
7. Pour the soup mixture over the top, ensuring the chicken is well-coated. Sprinkle mozzarella cheese evenly.
8. Bake for 25-30 minutes until chicken is fully cooked and cheese is bubbly and golden.
