Chicken Lombard
Ingredients:
8 oz package of sliced fresh mushrooms
2 tablespoons of melted butter
6 skinned and boned chicken breasts
1 cup of shredded mozzarella cheese
1/2 cup of chicken broth
1/2 cup of white wine
Salt and pepper to taste
Chopped parsley for garnish
Directions:
First, preheat your oven to 350°F (175°C). In a skillet, melt the butter over medium heat, then sauté the mushrooms until they’re nice and tender. Take your chicken breasts, season them with a bit of salt and pepper, and brown them on both sides in the skillet. Once browned, place them in a baking dish and pour those delicious mushrooms right on top. Add the chicken broth and white wine around the chicken. Top everything off with shredded mozzarella cheese. Pop the baking dish in the preheated oven for about 25-30 minutes, or until the chicken is thoroughly cooked. Once out of the oven, give it a touch of freshness with some chopped parsley before serving. Enjoy!
