Ingredients:

– 4 beef cube steaks (about 4 ounces each)
– 1 cup all-purpose flour
– 1 teaspoon salt
– ½ teaspoon black pepper
– ½ teaspoon garlic powder
– 1 large egg
– ½ cup milk
– 1 cup vegetable oil (for frying)
– 2 cups milk (for gravy)
– ¼ cup flour (for gravy)
– 1 tablespoon black pepper (freshly ground)
– Salt to taste

Directions:

1. Start by preparing the steaks. In a shallow dish, mix together 1 cup of flour, salt, black pepper, and garlic powder. In another bowl, whisk together the egg and ½ cup of milk.
2. Dip each cube steak into the egg mixture, allowing any excess to drip off, then dredge it in the seasoned flour, ensuring both sides are well coated.
3. Heat the vegetable oil in a large skillet over medium heat. Once the oil is hot (about 350°F), carefully add the breaded steaks, cooking until golden brown and crispy, about 3-4 minutes per side. Once cooked, transfer the steaks to a paper towel-lined plate to drain.
4. For the pepper gravy, drain excess oil from the skillet, leaving about 3 tablespoons. Whisk in ¼ cup of flour over medium heat, cooking for about 2 minutes until lightly browned.
5. Gradually whisk in 2 cups of milk, scraping up any browned bits from the bottom of the pan, until smooth. Stir in the ground black pepper and salt to taste. Cook the gravy until it thickens, about 5-7 minutes, stirring continuously.
6. Serve the crispy chicken fried steak topped with a generous spoon of pepper gravy.
