Ingredients:

3 cups cooked chicken, shredded or diced (rotisserie chicken works great)
1 1/2 cups diced ham

1 cup (120g) breadcrumbs (plain or seasoned)
1/4 cup (30g) grated Parmesan cheese
2 tablespoons melted butter
1 tablespoon chopped fresh parsley (optional, for garnish)

For the sauce:
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 1/2 cups (360ml) milk
1/2 cup (120ml) chicken broth
1 teaspoon Dijon mustard
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper, to taste

Instructions:

Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

Make the sauce:

In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until bubbly.

Gradually whisk in the milk and chicken broth, stirring constantly to avoid lumps. Bring to a simmer and cook until the sauce thickens, about 3-5 minutes.

Stir in the Dijon mustard, garlic powder, onion powder, salt, and pepper. Remove from heat.

Assemble the casserole:

Spread the cooked chicken evenly in the bottom of the prepared baking dish. Layer the diced ham on top of the chicken.

Pour the sauce evenly over the ham and chicken. Sprinkle the shredded Swiss cheese over the sauce.

Add the topping:

In a small bowl, mix the breadcrumbs, Parmesan cheese, and melted butter. Sprinkle the breadcrumb mixture evenly over the cheese.

Bake:

Bake for 25-30 minutes, or until the casserole is bubbly and the topping is golden brown.

Garnish and serve:

Let the casserole cool for 5-10 minutes. Garnish with chopped parsley if desired, and serve warm.

Tips:
For extra flavor, add a pinch of smoked paprika or thyme to the sauce.
