Savory Chicken Casserole with a Sweet and Spicy Plum Twist

Ingredients:

4 chicken thighs, skinless and boneless
2 cups plums, pitted and sliced
1 onion, chopped
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper (adjust to taste)
1 cup chicken broth
1 tablespoon soy sauce
Salt and pepper to taste
Fresh parsley, for garnish

Directions:

Preheat oven to 375°F (190°C).
In a large oven-safe skillet, heat olive oil over medium heat. Season the chicken thighs with salt and pepper, then add them to the skillet. Sear for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent.
Stir in the ground ginger, cinnamon, and cayenne pepper, cooking for an additional minute until fragrant.
Add the sliced plums, chicken broth, and soy sauce to the skillet, stirring to combine. Bring the mixture to a simmer.
Return the chicken thighs to the skillet, nestling them into the plum mixture. Cover the skillet with a lid or aluminum foil.
Transfer the skillet to the preheated oven and bake for 30-35 minutes, or until the chicken is cooked through and tender.
Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
