Cheesy Shrimp Scampi Pasta Bak
Made this once, now my neighbors ask when it’s coming back.
This dish takes everything we love about shrimp scampi — buttery garlic, lemon, and juicy shrimp — and wraps it in a cozy blanket of pasta and cheese. It’s fast, rich, and family-approved.
Step 1: Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
Step 2: Cook 12 oz of pasta (linguine or penne work great). Drain and set aside.
Step 3: In a skillet, melt 4 tablespoons butter over medium heat.
Add 4 minced garlic cloves and sauté for 1 minute.
Step 4: Stir in 1 lb peeled shrimp. Cook for 2–3 minutes, just until pink.
Step 5: Add the juice of 1 lemon, 1/4 teaspoon red pepper flakes, salt, and pepper to taste.
Step 6: Stir in 1 cup grated Parmesan and 1 cup shredded mozzarella.
Add 1/2 cup heavy cream and let everything melt together.
Step 7: Toss in the cooked pasta and stir well to coat.
Step 8: Transfer mixture to baking dish. Top with an extra sprinkle of mozzarella and Parmesan.
Step 9: Bake uncovered for 15–20 minutes, until bubbly and golden on top.
Step 10: Let rest 5 minutes, then serve warm with a side salad or crusty bread.
