Cajun Shrimp Scampi
Ingredients
1 pound shrimp, peeled and deveined
8 ounces linguine or spaghetti
4 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon Cajun seasoning
1/2 teaspoon red pepper flakes
Salt and pepper to taste
1/4 cup fresh parsley, chopped
Juice of half a lemon
Directions
1. Start by cooking the linguine according to the package directions. Once it’s done, drain it and set it aside for a bit.
2. In a large skillet, melt the butter over medium heat.
3. Add the minced garlic and sauté until it’s wonderfully fragrant, about one minute.
4. Stir in the shrimp, sprinkle on the Cajun seasoning, and add those red pepper flakes. Cook everything together until the shrimp turns pink and is cooked through—this usually takes about 3 to 4 minutes.
5. Now, add the cooked pasta right into the skillet with the shrimp. Toss in the fresh parsley and squeeze in the juice from half a lemon.
6. Give everything a good toss so all those flavors mix together beautifully.
7. Season with a little salt and pepper to suit your taste.
8. Serve up your Cajun Shrimp Scampi immediately, and enjoy every bite!
