Ingredients:

– 2 (225 g) boneless, skinless chicken breasts (sliced lengthwise to make 4 thinner cutlets)
– 6 tablespoons seasoned breadcrumbs (whole wheat or gluten-free)
– 2 tablespoons grated Parmesan cheese
– 1 tablespoon butter (melted) or olive oil
– 6 tablespoons reduced-fat mozzarella cheese
– 120 ml marinara sauce
– Olive oil spray

Instructions:

Prepare the Coating:
1. In a bowl, combine the seasoned breadcrumbs and grated Parmesan cheese. In another bowl, melt the butter.

Coat the Chicken:
2. Lightly brush the melted butter onto each chicken cutlet, then dip them into the breadcrumb mixture, ensuring even coverage.

Air Fry the Chicken:
3. Preheat the air fryer to 182°C (360°F). Place the breaded chicken cutlets in the air fryer basket, working in batches if necessary. Lightly spray the tops with olive oil.

Cook:
4. Air fry for 5 minutes, then flip the chicken. Top each piece with 30 ml marinara sauce and 22.5 g shredded mozzarella cheesee

Finish Cooking:
5. Air fry for another 3 minutes, or until the cheese is melted and bubbly.
