Golden Crispy Chicken Parmesan Bites with Garlic Aioli

Ingredients:
2 chicken breasts, cut into bite-sized cubes
1 cup breadcrumbs (preferably panko)
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 cup flour
2 eggs, beaten
1/4 cup olive oil (for frying)
Salt and pepper to taste
1/2 cup marinara sauce (for dipping)
For Garlic Aioli:
1/2 cup mayonnaise
2 cloves garlic, minced
1 tablespoon lemon juice
1 teaspoon Dijon mustard
Salt and pepper to taste
Directions:
In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, oregano, and basil.
Place the flour in another shallow bowl and the beaten eggs in a third.
Season the chicken cubes with salt and pepper. Then, dip each piece of chicken into the flour, coating it lightly. Next, dip it into the egg, and then coat it thoroughly in the breadcrumb mixture.
Heat the olive oil in a large skillet over medium-high heat. Once hot, add the breaded chicken cubes and fry for 3-4 minutes per side, until golden brown and crispy.
Remove the chicken bites from the skillet and place them on a paper towel-lined plate to drain excess oil.
To make the garlic aioli, mix together the mayonnaise, minced garlic, lemon juice, Dijon mustard, and season with salt and pepper to taste.
Serve the crispy chicken Parmesan bites with marinara sauce and garlic aioli for dipping.
