Pot Roast with Potatoes and Carrot
Ingredients:
– 3 lbs beef chuck roast (Halal-certified)
– 2 tablespoons olive oil
– 1 large onion, chopped
– 3 garlic cloves, minced
– 3 large carrots, peeled and cut into chunks
– 4 medium potatoes, peeled and quartered
Directions:
1. Preheat the oven to 300°F (150°C).
2. In a large pot, heat olive oil over medium heat.
3. Season the beef roast with salt and pepper, then sear it on all sides in the pot until browned.
4. Remove the roast and set it aside.
5. In the same pot, add chopped onion and minced garlic, sauté until softened.
6. Add carrots and potatoes, stirring for a few minutes.
7. Place the roast back in the pot with the veggies, add water or broth until it half covers the roast.
8. Cover the pot and transfer it to the oven.
9. Cook for 3-4 hours, or until the beef is tender.
10. Serve hot.
