Grilled Sausage and Mixed Vegetables
Ingredients:
1 large smoked sausage or kielbasa (about 1 lb)
1 yellow bell pepper, cut into chunks
1 red bell pepper, cut into chunks
1 orange bell pepper, cut into chunks
1 small red onion, cut into wedges
1 cup cherry tomatoes (optional)
2 cloves garlic, minced
2 tbsp olive oil
1 tsp smoked paprika
1/2 tsp chili powder (optional)
Salt and pepper to taste
Fresh parsley, chopped for garnish
Pickles or cornichons for serving (optional)
Instructions:
Prep the ingredients: Slice the sausage into thick rounds about 1/2 inch thick. Cut bell peppers and onion into bite-sized chunks. Mince the garlic.
Marinate vegetables: In a bowl, toss the bell peppers, onion, and cherry tomatoes (if using) with olive oil, smoked paprika, chili powder, garlic, salt, and pepper. Let sit for 10 minutes.
Heat the grill or grill pan: Preheat to medium-high heat.
Grill the sausage: Place sausage slices on the grill. Cook for about 3-4 minutes per side until they have nice grill marks and are heated through.
Grill the vegetables: Use a grill basket or skewers to grill the vegetables alongside the sausage. Grill for about 6-8 minutes, turning occasionally until tender and slightly charred.
Serve: Arrange the grilled sausage and vegetables on a serving platter. Garnish with fresh chopped parsley and sprinkle a little sea salt or coarse salt on top. Add pickles or cornichons on the side if desired.
