Balsamic Chicken Breast with Spinach and Tomatoes
Ingredients:
– 4 boneless, skinless chicken breasts
– 2 tablespoons balsamic vinegar
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– 1 teaspoon dried oregano
– Salt and black pepper to taste
– 4 cups fresh spinach leaves
– 1 cup cherry tomatoes, halved
– 1/4 cup grated Parmesan cheese (optional)
Instructions:
1. Preheat your oven to 400°F (200°C).
2. In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, oregano, and add salt and pepper.
3. Thoroughly coat chicken breasts with the balsamic mixture and place them in a baking dish.
4. Bake for 20 minutes in the preheated oven.
5. While chicken is baking, heat a skillet over medium heat. Sauté spinach and cherry tomatoes for 3-4 minutes, just until spinach wilts and tomatoes soften.
6. Once chicken is done cooking, take it out of the oven and top with the sautéed spinach and tomatoes.
7. Return the dish to the oven and bake for an additional 10-15 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).
8. Before serving, sprinkle with Parmesan cheese if desired.
