Raspberry Cream Cheese Bite

 

Ingredients:

 

8 oz cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh raspberries

1/2 cup shredded coconut, toasted

1/2 cup crushed graham crackers (optional)

 

Directions:

 

In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth and creamy.

 

Gently fold in fresh raspberries, being careful not to crush them completely.

 

Scoop small amounts of the mixture and roll into balls using a spoon or small scoop.

 

Roll each ball in toasted coconut (and optional crushed graham crackers) until fully coated.

 

Place on a parchment-lined tray and refrigerate for at least 1 hour to set.

 

Serve chilled, and enjoy!
